About Oolong Tea
Oolong tea is a traditional Chinese tea that is semi-oxidized. In other words, the oxidization process of oolong tea places it between black tea and green tea. It lacks the rosy, sweet aroma (and caffeine content) of black tea, making its flavor profile is more closely related to green teas. However, it does not have the stridently grassy vegetal notes of pure green teas.
In the West, oolong tea is prepared much the same way as black tea. Leaves (or bags) are steeped for two to five minutes. Tea enthusiasts, however, may wish to try the Asian steeping method. This method entails rinsing loose leaves with hot water and immediately discarding the first infusion. Rinsed leaves are then fully steeped in hot water for 30 seconds. (The short steeping time allows oolong leaves to be reused up to eight times.)
